Pommes Anna Jamie Oliver: Potatoes Anna. It doesn’t have quite the same ring to it, does it?

I am a massive potato fan and love potatoes in any way shape and form so when I was recently challenged to put together a French meal potatoes had to feature and having never tried Pommes Anna myself my husband convinced me it would be another of my potato loves on the first taste!

This recipe is brilliant served with a ploughman’s platter of your favourite cheeses, cured meats and a crisp apple and walnut salad.

Ingredients

  • 1 tbs olive oil
  • 3 red onions, sliced
  • 2 tbs freshly grated horseradish
  • 1 kg waxy potatoes, very thinly sliced
  • 100g ghee
  • 20g Gruyère cheese, grated
  • Truffle oil (optional), to serve

Method

Preheat oven to 180 °C. Heat oil in a large pan over medium-low heat and cook onion, stirring, for 15 minutes or until soft.

Stir in horseradish, then set aside to cool. Rinse potato under running water to remove starch. Spread on a clean tea towel and pat dry with paper towel.

Grease the base of a 20cm ovenproof fry pan with the ghee. Arrange the potato over base in overlapping circles, brushing each layer with ghee and seasoning as you go. When you have used half the potatoes, sprinkle over onions and Gruyère.

Continue layering potato. Bake on the bottom shelf of the oven for 1 hour or until tender. Run a knife around the pan, then press a plate against the potatoes and tilt the pan over a bowl to catch the excess ghee.

Slide the potato cake onto a board and serve crisp-side up.

Drizzle tart with truffle oil, if using, and serve with a ploughman’s platter

To be fair this recipe is not really for those looking to reduce their carb intake, nor their fat intake as it does contain a fair amount of fat. However, I am presuming that since this is my first time of making it then the butter amount could be reduced.

I also didn’t wait for it to cool down so instead of making a traditional solid cake shape mine did separate … but in fairness that was all that was wrong, so I am taking that as a win!

Ingredients

  • 1kg Potatoes
  • 65 g Butter
  • Salt & Black Pepper

Method

Peel potatoes

Slice potatoes thinly (or use a mandolin if you have one)

Layer potatoes over your dish one layer at a time (you will need to overlap them slightly)

Drizzle on melting butter

Season with salt and black pepper between each layer

On the final layer drizzle on the remaining butter

Cook in pre heated oven at 220 degrees c (425 F or Gas Mark 7) until tender

Since I didn’t use a mandolin I did have to have cover with foil halfway through to stop them burning and allow them to remain softening

If you are looking for traditional Pommes Anna you will need to press down on the potatoes several time throughout cooking to ensure they form a cake shape and stick together.

Crispy golden outside and rich buttery and creamy on the inside Anna potatoes are a classic French dish.

Ingredients

  • Salt To Taste
  • Butter 350 grams
  • Potatoes. I Like To Use A Charlotte Or Nicola As They Are A Nice Small Waxy Varieties 900 grams
  • Pepper To Taste

Method

Peel the potatoes and cut them into thin round slices, wash them thoroughly in cold water to take out the starch, dry them with a cloth and make sure that they are well dried.

Put some butter into a casserole or sauté pan and arrange the potatoes in layers overlapping each other, reversing the overlapping with each layer.

Dot each layer with butter and sprinkle with salt, cover and cook in a hot oven (425 °F / 220 °C / Gas mark 8 for between 30 and 40 minutes until the potatoes are tender.

Pour off the excess butter before serving, I like to turn the potatoes onto a platter for serving the potatoes ought to be rich, golden, and crisp on the outside with a creamy buttery centre.

Liberally brush an 8-inch saute pan with clarified butter and arrange the potato slices in concentric rings emanating from the center of the pan. Arrange the slices of potato to cover the base, overlapping each a little as you go. At its heart, it’s simply layers of thinly sliced and well-seasoned potatoes sandwiched together by lashings of butter and baked to form a potato cake of sorts.  Because it’s served upside down, time spent in arranging your circles of potato will be rewarded. Ingredients 3 large russet potatoes, washed but not peeled Butter Olive oil Kosher salt Well seasoned slope sided iron or non-stick pan, 8-10 inches wide. (An omelette pan is ideal.) Preparation Heat large knob of butter with a healthy drizzle of olive oil over medium low heat until butter melts and just starts to foam.
